About Us

Cafe Safak was established in 2005 by Ali Cingitas and his Australian wife Ineke with the idea to serve quality espresso coffee to customers. Since it's humble beginnings the cafe has expanded to service the local and travelling community with a taste of Goreme.  The Cingitas family who are local to Goreme and have been involved in the tourism industry since 1980 are now are involved with the running and operation of the cafe. 

Nowadays the cafe serves homestyle cooking prepared by Fatma Cingitas. The cafe is well known for its Espresso coffee, Lentil Soup, Safak Special Gozleme, Turkish Kofte and daily specials. You can also attend cook demonstrations at the Cingitas family home to learn how to make the delicious food you will taste at the cafe.

 

To become more involved with the local community the Cingitas family have opened their home to tourists for those wanting to stay a longer duration in the comfort of their own self contained unit.

About Fatma Cingitas

 

Fatma was born and raised in Goreme, Turkey. She learnt her cooking skills from her mother as a young girl and has developed these skills creating her special twists to many traditional anatolian dishes.

Every year Goreme holds a food festival where local women of the surrounding region enter dishes. Fatma has won several times for her Lentil Soup and Guvec.

Fatma is now offering local cooking demonstartions in her house where people can observe how her creations are made. 

About Ali Cingitas

Ali was trained as a barista in Melbourne, Australia and has a passion and desire to serve quality coffee to his customers. He is well-loved and known in town as the infamous barista and has taught many of the locals the value in a decent cup of coffee.

Ali resides part time in Melbourne and part time in Goreme, Turkey.
